Brinjal Rice
Brinjal, a tried and tested vegetable @ home coz everyone likes it... From the range of curries i also tried it with Rice and it clicked too. For a person who doesn't like vangibath he did like it...
Ingredients needed
Cooked Rice - 1
Brinjals- 3
Green chilli - 1
Ginger - small piece
Turmeric Powder -1/4 tsp
Oil - 1 1/2 tbsp
Salt as required
Coriander seeds - 1 tbsp
Bengal Gram/channa dal - 1 tbsp
Urad dal -2 tsp
Red chillies - 3
Black peppercorns -1/4 tsp
Jeera - 1/4 tbsp
Coconut - 1 tbsp
Mustard -1/2 tsp
Asafoetida -1/4 tsp
Curry leaves -little
Method
Cut brinjal into Small cube pieces.
Heat a tsp of oil and fry coriander seeds, channa dal, urad dal, Red Chillies and pepper. After it turns slightly brown add coconut and fry.
Powder the fried ingredients and keep aside.
Heat a tbsp of oil, add the mustard, once it splutters add curry leaves and asafoetida.
Add brinjals, slit green clilli, finely chopped ginger and turmeric powder.
Cook the brinjal in low flame sprinkling water.
Then add the grounded powder and required salt.
When the brinjals are slightly cooked add the cooked rice and mix well.
Serve hot with any raita or papads.
