Though Mushrooms were tabboo at home till sometime before, we have somehow sneaked it into the kitchen now. Have tried only two recipes with Mushroom and here is the first of it.
Ingredients
Button mushrooms - 200 gms
Green chillies- 2
Oil - 1 tbsp
Red chilli powder - 1 tbsp
Curry powder - 1 tbsp
Garam masala - 1 tbsp
Pepper powder - 1/4 tbsp
Turmeric powder - 1/4 tbsp
Salt- to taste
To sauté and grind to a paste
Onions - 2 or 3 depending on the size
Oil 2 tbsp
Ginger-garlic paste - 2 tbsp
Tomatoes - 2
Method
Cut the onions and tomatoes to be ground in to big 8 pieces
Heat the 2 tbsp oil and sauté onions until golden brown in colour.
Add ginger-garlic paste and the cut tomatoes.
Sauté well till the raw smell disappears and the mixture turn pulpy.
Cool and grind this into a smooth paste.
Slice onions and mushrooms separately.
Slit the green chillies lengthwise
Heat the 1 tbsp oil and add the sliced mushrooms and stir-fry till tender.
Add green chilles, chilly powder, turmeric, pepper powder, garam masala and salt in that order.
Without burning, just see to it they get heated up well.
Add the ground paste and mix well adding a little water as mushrooms let out water while cooking too.
Simmer till mushrooms are cooked and the gravy reaches the right consistency.
Mushroom masala goes best with any variety of Indian roti or Pulao. I served it with Phulkas
